Fairfield's sweet 375th: Towering confection takes the cake in anniversary bake-off

It really took the cake.

An elaborate confection -- several tiers high and topped with a champagne bottle -- featured decorations of scenes from around Fairfield. And it was declared the winner Thursday of the Fairfield 375th Anniversary Bake-Off.

Baked by 22-year-old Trevor Seigerman, of the Pink Cupcake Shack, the winning entry was fashioned from salted caramel, chocolate cake with espresso butter cream, brown sugar meringue and chocolate ganache. The cake will be re-created for the town's big anniversary gala in November.

It was one of five cakes from local bakeries entered into the contest, sponsored by the Fairfield Chamber of Commerce. Those in attendance at Mercedes-Benz of Fairfield got to taste all of the entries and vote for their favorite.

"It was a great evening, said Beverly Balaz, the chamber's executive director. "The creativity was just spectacular."

Seigerman said the winning cake was a group effort by the employees at the bakery, based at the Brick Walk commercial complex downtown. After devising the concept and design celebrating various aspects of Fairfield life, putting the cake together took about a week, he said.
